Mứt khoai môn bùi ngon với những que mứt bùi bùi, chiên béo thơm, áo đều lớp đường trắng tinh, ngọt dịu. Thích hợp làm món ngon nhâm nhi lót dạ trong các bữa phụ.
Khoai môn đem rửa sạch rồi nạo bỏ phần vỏ. Rửa lại 1 lần nữa sau đó đem thái khoai thành từng thanh dài cỡ 1 ngón tay là vừa.
Đun sôi nhiều dầu sao cho khi chiên khoai vừa đủ ngập trong dầu là được. Cho khoai môn vào chiên tới khi khoai vừa chín và cứng lại. Vớt khoai ra để cho ráo dầu rồi đặt khoai trên đĩa có lót sẵn giấy thấm dầu.
Cho 150g đường, 1/4 muỗng cà phê muối vào chảo, thêm 1 chút nước đủ để ướt đường là được. Bật bếp và nấu cho nước đường sôi lên để đường tan hết. Tiếp theo, cho khoai môn vừa chiên vào cùng, đảo đều và sên lửa nhỏ vừa cho khoai ngấm nước đường. Thi thoảng đảo thật nhẹ nhàng để tránh bị nát khoai. Khi nước đường keo lại và rút hết vào khoai thì cho vani vào cùng, đảo thêm vài phút nữa cho khoai khô ráo là tắt bếp. Tiếp tục đảo thật nhẹ nhàng để khoai khô ráo hoàn toàn và nhiệt trong chảo giảm hẳn mới thôi.
Khi mứt nguội có thể cho vào hũ kín bảo quản dùng dần trong thời gian dài.
